Amaranth is very interesting crop from the medicinal aspects: with high content of protein; is gluten free, contains starch, high content of oil rich in polyunsaturated fatty acids, high amounts of dietary fibre, is rich in minerals and another aspects (organic colours etc.). All of these chemical factors have directly relation with the medicinal aspects of its use for public health.
